1. To make the caramel, place the 200g white sugar in a small saucepan along with the 60ml (¼ cup) water. Warmth, with out stirring, till melted and caramelised to a golden brown hue. Add the butter and cream and swirl to type a sauce. Add the white chocolate and enormous pinch of sea salt flakes. Swirl to mix, then put aside and permit to chill utterly.
2. For the marshmallows, fill two 30 x 20cm baking trays with cornflour, shaking to get a largely even layer. Press a big, clear egg calmly into the flour to make egg moulds. Area the indentations 5 – 10cm aside.
3. Within the bowl of a stand mixer fitted with the whisk attachment, mix 125ml (½ cup) water and the gelatine. Stir and permit to
bloom for five minutes. As soon as the gelatine has bloomed, soften over a pot of gently simmering water.
4. In a small pot, mix 330g (1½ cups) white sugar, syrup, 125ml (½ cup) water and small pinch of salt. Place over medium warmth and produce to the boil. Boil till the sugar syrup reaches 120°C on a sugar thermometer or comfortable ball stage (the syrup will type a comfortable ball if dropped into chilly water). Take away from warmth.
5. Flip the mixer on and slowly pour the syrup in a gentle stream down the within of the bowl with the gelatine. As soon as all of the syrup has been blended in, proceed mixing for an extra 20 seconds.
